Peel oranges so that the white skin is completely removed. Cut out fillets between the parting skins. Squeeze the parting skins, collect the juice. Peel the mango, cut the flesh from the stone and dice. Wash, halve and seed the grapes. Peel, quarter and core pears and cut them into slices
Mix sugar, rum, lemon and orange juice. Mix with fruit in a flat casserole dish
Beat the egg whites and 1 pinch of salt until stiff, adding icing sugar. Fold in 2 tablespoons of almonds. Spread on the fruits. Sprinkle the remaining almonds over them. Bake in the preheated oven (electric cooker: 225 °C/recirculating air: 200 °C/gas: level 4) for approx. 10 minutes or under the grill on highest level for approx. 5 minutes.
