Wash, clean and pat dry the cucumber and radishes. Slice cucumber into thin slices, cut radishes into sticks. Clean, wash and drain the salad. Cut turkey breast into rhombs or cubes.
Wash the chives, dab dry and cut into fine rolls. For the sauce, mix egg yolk, honey, mustard and vinegar. Whip the oil into the sauce. Stir the chives into the sauce and season with salt and pepper.
Line cocktail glasses with salad leaves. Mix cucumber, radishes and turkey breast and spread on top. Pour honey-mustard sauce over it and serve immediately.
