Ingredients

  • 1/2 cube (21 g) Yeast
  • 400 g Flour
  • 7-10 Tbsp Salt
  • 6 TABLESPOONS Olive oil
  • 1 Onion
  • 2 Garlic cloves
  • 500 g colourful peppers
  • 150 g Mozzarella cheese
  • 1 small stem rosemary
  • 2 stem(s) flat leaf parsley
  • 250 g mixed minced meat
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Tomato paste
  • 200 ml Tomato juice
  • 7-10 Tbsp Herbs
  • 7-10 Tbsp Flour

Directions

    Mix yeast and 200 ml of lukewarm water in a bowl. Add flour, 1 teaspoon of salt and 4 tablespoons of olive oil. Knead and form into a smooth dough. Cover and leave to rise in a warm place for 30-45 minutes.

    In the meantime peel and chop the onion. Peel the garlic and press it through a garlic press. Clean and wash the peppers, cut them into small cubes. Drain and dice the mozzarella. Strip rosemary needles from the stems.

    Wash the parsley and chop the leaves coarsely. Heat 2 tablespoons of olive oil. Sauté garlic and onion in it until transparent. Add the minced meat, fry well. Season with salt and pepper. Add paprika and tomato paste, fry for another 5 minutes.

    Deglaze with tomato juice and boil down for 5 minutes. Fold in herbs and mozzarella. Knead yeast dough again. Roll out round (30 cm Ø) on a lightly floured work surface.

    Pile the chopped mass onto one half of the dough. Brush the edges of the dough with water. Fold over the free half of the dough, press the edges together. Place the calzone on a floured baking tray and let it rise for about 15 minutes.

    Cover with some herbs and brush with water. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes.
