Fillet with zucchini

Ingredients

Servings: 4
  • 160 g Long grain rice
  • 120 g frozen peas
  • 1-2 TABLESPOONS oil, salt, pepper
  • 8 (320 g) Medallions of pork
  • 4 Courgette
  • 7-10 Tbsp Tarragon or parsley
  • 200 ml Broth
  • 7-10 Tbsp Lemon juice
  • 4 TSP Mustard
  • 4 TSP Sauce thickener
  • 4 small tomatoes

Directions

    Boil the rice. Add peas and cook for about 5 minutes

    Brush the coated pan with oil. Fry meat for about 5 minutes, season. Fry zucchini slices with it. Wash herbs, shake dry. Stir in broth, lemon and mustard, thicken. Season to taste, arrange. Dice tomatoes, sprinkle over rice
