Filled Bauernzopf with cream cheese spread

Ingredients

  • 1 pack of (1000 g) Baking mix for crusty bread
  • 2 bags of dry yeast
  • 5 Onions
  • 1 package (200 g) Diced ham (cottage ham, mildly smoked, Abraham)
  • 1 TABLESPOON Oil
  • 1 collar Chives
  • 500 g Low-fat curd
  • 200 g Double cream cream cheese
  • 3-4 Tbsp Mineral water
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground pepper
  • 7-10 Tbsp tomato slices and chives
  • 7-10 Tbsp Flour

Directions

    Pour the baking mixture into a large mixing bowl and mix in the yeast. Add 720 ml of lukewarm water and mix briefly with the dough hooks of the hand mixer on a low setting, then knead to a smooth dough for approx. 3 minutes on the highest setting. Cover and leave to rise in a warm place for approx. 30 minutes. Meanwhile peel 4 onions and dice them finely. Dice the ham in a pan without fat. Remove from the pan and add oil to the frying fat, heat up and fry the onions in it until transparent.

    Add ham, mix, remove from the pan and let everything cool down. Knead the bread dough again with floured hands and divide it into two equally sized pieces. Form 2 strands from each ball on a floured work surface (1 strand approx. 50 cm long). Press lightly flat. Spread the ham and onion filling evenly on top and fold the long sides of the strand over the filling. Press together with your fingers so that rolls are formed again. Turn the rolls into a braid. Carefully place the plait diagonally on a baking tray lined with baking paper. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 45-50 minutes. In the meantime, peel and finely dice the remaining onion. Wash the chives, dab dry and cut into fine rolls.

    Turn the rolls into a braid. Carefully place the plait diagonally on a baking tray lined with baking paper. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 45-50 minutes. In the meantime, peel and finely dice the remaining onion. Wash the chives, dab dry and cut into fine rolls. Mix quark, cream cheese, onions, chives and mineral water with the whisk of the hand mixer. Season to taste with salt and pepper. Remove bread from the oven, place on a rack and let it cool down. Cut the bread into slices. Add quark cream. Serve garnished with tomato slices and chives as desired
