Separate 1 egg. Knead flour, butter, 1 egg yolk and 1 egg, salt and 100 g icing sugar to a dough. Wrap in cling film and chill for 1 hour. Roll out the dough to a thickness of about 0.5 cm. Cut out cookies with motif cutters (e.g. elephants, camels) and place on 3 baking trays covered with baking paper. Bake the baking trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 10 minutes.
Let them cool down. Place cookies on a cake rack. Whisk the egg white and mix with 200 g icing sugar and lemon juice. Spread the icing on small bowls and colour with food colouring. Decorate cookies as desired with coloured icing and sugar pearls. Leave to dry for 1 hour
