Cut the melon into slices, then cut the flesh from the skin. Cut the flesh into about 12 equally sized cubes. Clean and wash the chilli, cut into about 12 thin slices. Wash the lime hot, dry it and finely grate the peel. Halve the lime and squeeze it. Mix juice, salt, pepper and 1 pinch of sugar. Fold in the oil.
Put some cheese and 1 chilli slice on each melon cube. Drizzle the vinaigrette over it and sprinkle with lime zest.
