Exotic fruits with coconut cream

Ingredients

  • 2 Lime or 1 lemon (possibly untreated)
  • 2 TABLESPOONS Maple syrup or liquid honey
  • 1/2 (approx. 400 g) Pineapple
  • 500 g Litchis
  • 6 TABLESPOONS sweetened coconut milk
  • 150 g Whole milk yoghurt
  • 1 package Vanillin sugar
  • 100 g Whipped cream
  • 1 TABLESPOON Coconut chips or flakes
  • 7-10 Tbsp Mint

Directions

    Halve the limes and squeeze them, possibly up to 4 slices for decoration. Mix juice and syrup. Clean the pineapple, possibly up to one slice for decoration, peel. Remove hard stalk. Cut the pineapple into pieces. Peel and stone lychees. Mix everything

    Mix coconut milk, yoghurt and vanillin sugar. Whip cream until stiff and fold in

    Roast the coconut chips and take them out. Serve fruit salad with coconut cream and chips. Decorate with lime, pineapple and mint
