Exotic drinks: Cherry juice with star anise, Szechuan pepper and balsamic

Ingredients

  • 1 kg спелая вишня
  • 550 g Cane sugar
  • 10 Szechuan peppercorns
  • 150 ml dark balsamic vinegar
  • 75 ml Cider vinegar
  • 1 Star Anise

Directions

    Wash, stalk and stone the cherries. Cut the cherries in half, mix with sugar and pepper in a bowl, leave to stand for approx. 1 hour, then stir again, cover and leave to stand in a cool place for 1 day

    Mash the cherries with a potato masher in the resulting juice, cover and leave in a cool place for another day

    Add both types of vinegar and star anise, stir well and leave in the refrigerator for 4 days. Line a bowl with a damp gauze cloth. Pour in the cherries. Squeeze the cherries using the cloth. Pour the syrup into a bottle and store in the refrigerator.

    To serve, pour 1 part cherry juice with 2 1/2-3 parts mineral water and serve with ice cubes
