Elderberry and pear soup

Ingredients

  • 1 untreated lemon
  • 3/4 l Elderberry juice (unsweetened)
  • 2-3 tablespoons (50 g) Sugar
  • 1 stick of cinnamon
  • 4-5 Cardamom capsules (substitute cloves)
  • 2-3 (approx. 300 g) Pears
  • 1 tablespoon (15 g) Cornstarch

Directions

    Wash lemon hot and dab dry. Peel 1 small piece of lemon peel as a spiral. Peel the rest of the peel in thin strips with a julienne chiseler. Boil up juice, sugar, cinnamon stick, possibly cardamom and lemon spiral. Cover and let it simmer for about 5 minutes.

    Peel and quarter the pears and remove the core. Cut pears into thin slices

    Remove lemon peel and spices. Stir the starch and some water until smooth. Stir into the soup and bring to the boil again. Steam pears for 4-5 minutes. Arrange the soup, garnish with the lemon strips

    -spices in a tea ball or gauze bag and hang them in the soup. They release their aroma and can be removed again without leaving any residue in one easy step

    -elderberries (lilac, elderberries) contain a lot of vitamin C. The hot juice warms up really well and helps with colds
