Bring 300 ml water to the boil, brew tea and leave to infuse for 3 minutes. Carefully cut the vanilla pods lengthwise, scrape out the pulp and cut the pods in half lengthwise. Boil up elderberry juice, grape juice, orange juice and vanilla pulp and pods.
Strain the tea and pour it in. Sweeten with honey. Remove the vanilla beans, cut in half and turn in sugar. Pour hot punch into glasses. Add one tablespoon of cream to each. Decorate with vanilla and orange peel.
