Peel and chop the ginger. Bring 750 ml water, 200 ml milk, cardamom, cloves, aniseed, fennel, cinnamon, ginger and sugar to the boil and simmer over medium heat for about 1 minute. Add tea, bring to the boil again and let it simmer on low heat for about 10 minutes (should not boil any more). Heat 50 ml milk and froth up. Pour tea through a sieve and fill into glasses. Garnish with milk foam and cinnamon
