Duck breast on spring salad

Ingredients

  • 1 Duck breast (approx. 350 g)
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 150 ml Orange juice
  • 50 ml white balsamic vinegar
  • 7-10 Tbsp Sugar
  • 1 collar (225 g) Spring onions
  • 200 g Strawberries
  • 150 g Radishes
  • 2 Federation Rocket (à approx. 65 g)
  • 4 discs (40 g each) brown bread

Directions

    Wash the duck breast and pat dry with kitchen paper. Cut into very thin slices. Heat the oil in a large pan, add the meat and fry on each side for about one minute. Season with salt and pepper, remove from the pan and set aside. Deglaze the meat with orange juice and vinegar, bring to the boil and season to taste with salt, pepper and sugar. Pour out of the pan and let it cool down. In the meantime clean and wash spring onions and cut them into fine rings.

    Wash, clean and halve the strawberries. Clean, wash and cut radishes into fine slices. Clean, wash and drain the rocket well. Mix the rocket, duck breast, spring onions, radishes and strawberries. Pour vinaigrette over it and mix. Arrange in small bowls. Toast black bread and add
