Ingredients

Servings: 4
  • 900 g frozen mixed berries (e.g. strawberries, blackcurrants, raspberries, blackberries)
  • 1 package Vanillin sugar
  • 200-300 g Sugar
  • 250 g Toast
  • 7-10 Tbsp Cling film

Directions

  1. 1

Put the frozen berries, 3 tablespoons of water, vanillin sugar and sugar in a pot and bring to the boil. In the meantime remove the rind from the toast. Drain the berries and collect the juice. Soak slices of toast one after the other with the drained juice and line the bottom and walls of a large cup (approx. 300 ml) with it without gaps. Keep enough bread to cover the surface. Put berries into the cups.

  2. 2

Soak the rest of the toast and cover the berries with it. Wrap cups in cling film and weigh them down with a board. Leave in a cool place for at least 8 hours. Remove the foil, turn the pudding out onto plates and decorate with lemon balm and berries. Liquid cream tastes good with it

    8 hours waiting time
