Curd cheese sprinkles with apricots

Ingredients

Servings: 8
  • 125 ml Milk
  • 575 g Flour
  • 1/2 cube (21 g) Yeast
  • 160 g Sugar
  • 225 g Butter or margarine
  • 3 Eggs (size M)
  • 1 pinch Salt
  • 2 packages Vanillin sugar
  • 1 can(s) (425 ml) Apricots
  • 250 g Low-fat curd
  • 125 g Icing sugar
  • 7-10 Tbsp juice of 1/2 lemon

Directions

    Warm the milk lukewarm. Put 300 g of flour in a bowl and press a depression in the middle. Crumble yeast into it, mix with some flour from the edge, 20 g sugar and milk. Cover and let it rest in a warm place for about 15 minutes. Melt 75 g fat, let cool lukewarm. Put 20 g sugar, 1 egg, salt and fat on the edge of the flour.

    Knead everything with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 30 minutes. For the crumble dough melt 150 g fat. Mix 275 g flour, 80 g sugar and 1 packet of vanillin sugar in a bowl. Add the fat and knead into crumbles with the dough hooks of the hand mixer. Drain the apricots. Mix quark, 40 g sugar, 1 packet of vanillin sugar and 2 eggs. Knead the dough once more and divide into 8 pieces. Roll out each piece round (approx. 12 cm Ø) on a floured work surface. Put 4 dough taler each on 2 baking trays lined with baking paper. Spread the quark mixture on top and cover with apricots. Add crumbles.

    Mix quark, 40 g sugar, 1 packet of vanillin sugar and 2 eggs. Knead the dough once more and divide into 8 pieces. Roll out each piece round (approx. 12 cm Ø) on a floured work surface. Put 4 dough taler each on 2 baking trays lined with baking paper. Spread the quark mixture on top and cover with apricots. Add crumbles. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes. Let them cool down. Stir icing sugar with lemon juice until smooth. Spread in strips on the talers. Leave to dry. Decorate with lemon balm
