Cucumber spinach lassi with apple

Ingredients

  • 1 walnut-sized piece of ginger
  • 1 Cucumber
  • 100 g young leaf spinach
  • 1 Apples (e.g. Granny Smith)
  • 2-3 stem(s) Mint
  • 500 g low-fat yoghurt
  • 7-10 Tbsp salt, pepper

Directions

    Peel and finely chop the ginger. Peel cucumber, cut lengthwise into halves, remove seeds and dice. Clean, wash and chop the spinach. Apple wash, quarter, core and dice. Mint wash and chop.

    Finely puree yoghurt, ginger, cucumber, spinach, mint and apple. Season to taste with salt and pepper. Divide into four glasses.
