Cucumber couscous salad with mint cream cheese

Ingredients

  • 7-10 Tbsp Salt
  • 5 TABLESPOONS Olive oil
  • 250 g Couscous
  • 25 g Butter
  • 1/2 (approx. 200 g) Cucumber
  • 150 g Spring onions
  • 200 g Romaine lettuce hearts
  • 1/2 bunch Peppermint
  • 2 Limes
  • 7-10 Tbsp Pepper
  • 1/4 TEASPOON Cumin
  • 200 g granular cream cheese (20 % fat)

Directions

    Bring 250 ml salted water to the boil. Take the pot off the stove. Add 1 tablespoon of oil and couscous while stirring. Leave to swell for about 4 minutes in a closed pot. Add butter and loosen couscous with a fork while spreading melted butter

    Wash and clean the cucumber, cut into eight pieces lengthwise and cut into slices. Clean and wash spring onion and cut into fine rings. Clean, wash, shake dry and cut into strips. Mint wash, shake dry, pluck leaves from the stems and chop. Halve limes and squeeze juice

    Whisk lime juice and 4 tablespoons of olive oil. Season with salt, pepper and cumin. Mix couscous, cucumber, mint, up to about 1/4 for the cheese, spring onion and marinade. Season to taste with salt and pepper

    Mix cheese and remaining mint, season with pepper. Arrange salad and crumble cheese over it. Thin flatbread tastes good with it
