Dice bread. Peel garlic and chop finely. Melt the fat in a pan and roast the bread and half of the garlic in it. Season with salt and paprika. Remove the bread cubes from the pan and set aside.
Mix yoghurt, mayonnaise, lemon juice, milk, parmesan and the remaining garlic. Season with salt, pepper and sugar. Skip the bacon in a pan. Clean and wash the salad, dab dry and cut into strips.
Clean, wash and halve the tomatoes. Mix lettuce, bacon and tomatoes, pour sauce over it and sprinkle with some croutons. Add the rest of the croutons separately. If you like, garnish with a parmesan slicer and serve sprinkled with pepper.
