Crunchy Apple-Plum Ginger Crumble

Ingredients

  • 7-10 Tbsp Grease
  • 400 g Apples (e.g. Elstar)
  • 400 g Plums
  • 1 piece(s) (approx. 2 cm) fresh ginger
  • 50 g Almonds with skin
  • 100 ml Orange juice
  • 1⁄2 Tsp Cinnamon
  • 100 g Butter
  • 100 g Flour
  • 100 g Sugar
  • 2 packages Vanilla sugar
  • 100 g crunchy oats
  • 100 g Whipped cream
  • 150 g Fresh cream
  • 6 small or 1 large casserole dish (approx. 250 ml content each)

Directions

    Preheat oven (electric cooker: 200 °C/circulating air: 180 °C/gas: see manufacturer). Grease six ovenproof dishes (each with a capacity of approx. 250 ml) or a large casserole dish. Wash, quarter, core and halve apples crosswise again.

    Wash and halve the plums, remove stones and halve the halves again crosswise. Peel ginger and chop finely. Mix fruit, almonds, orange juice, ginger and cinnamon and distribute in the moulds.

    Pre-bake in a hot oven for about 10 minutes.

    For the crumbles melt butter in a small pot. Mix flour, sugar, 1 packet of vanilla sugar and oat flakes in a bowl. Add the liquid butter and knead into coarse crumbles with your hands.

    If they are too dry, knead in another 2 tablespoons of water.

    Remove the apple and plum mixture from the oven. Spread crumbles over the fruit. Bake at the same temperature for another 15 minutes. Stir cream, crème fraîche and 1 packet of vanilla sugar with a spoon until smooth.

    Serve crumble with sauce.
