Defrost the puff pastry at room temperature. Roll out thin sheets individually. Either cut out various small biscuits or cut out long strips. Spread with whisked egg yolk.
Sprinkle with poppy, sesame, pistachios and sunflower seeds as desired. Put on a cold rinsed baking tray. Bake in a preheated oven (electric: 200 °C/ gas: level 3) for about 10 minutes.
