Crêpes with banana quark

Ingredients

Servings: 4
  • 2 Eggs (Gr. M)
  • 1/4 l Milk
  • 100 g Flour
  • 1 knife tip Baking Powder
  • 1 TEASPOON + 1 tablespoon of sugar
  • 1 pinch Salt
  • 2 TABLESPOONS Mineral water (carbonated)
  • 1 TABLESPOON butter/margarine
  • 400 g Low-fat curd cheese (e.g. with buttermilk)
  • 1 package Vanillin sugar
  • 1 large ripe banana
  • 1 TABLESPOON Lemon juice

Directions

    Mix eggs, milk, flour, baking powder, 1 teaspoon sugar and salt to a smooth dough. Leave to swell for about 15 minutes. Stir in mineral water

    Heat the fat in portions in a small coated pan. Bake 8 thin crêpes of the dough one after the other until golden brown. Keep warm if necessary.

    Mix quark, 1 tablespoon sugar and vanillin sugar. Peel banana, dice finely and sprinkle with lemon juice immediately. Fold into the quark. Fill crêpes with it and roll them up. Delicious with chocolate sauce

    You can bake the crêpes well in advance. If necessary, before filling, stack them in the microwave at medium power for about 45 seconds. For an extra whistle, stir 2 tbsp. colourful sugar crumbles or hazelnut brittle into the quark
