Wash, dry and dice the fillet. Clean and wash the vegetables. Peppers in large pieces, zucchini in slices. Peel onion, dice coarsely. Peel and chop garlic.
Fry the meat in hot clarified butter until it is firm. Fry the bell pepper, onion and garlic for about 10 minutes. Fry the zucchini briefly. Add tomatoes and 200 ml water, season to taste. Bring everything to the boil. Cover and stew for about 10 minutes.
Bring almost 900 ml water and 1 teaspoon salt to the boil. Cover the couscous and simmer for approx. 5 minutes, loosen up with a fork more often. Fold in butter. Season to taste with salt and pepper. Serve everything
