Peel onions and cut or slice them into fine rings. Remove the sausage from the skin. Cut sausage and cucumber into fine slices
Mix vinegar, 3 tablespoons of water, mustard, salt and pepper. Fold in the oil. Mix with sausage, onions and cucumber. Cover and let stand for at least 30 minutes.
Wash the chives and cut into fine rolls. Fold into the sausage salad. Season to taste with salt and pepper. Garnish with radishes. Served with: pretzels
