Heat the fat with the honey, sugar and gingerbread spice while stirring until the sugar has dissolved (do not boil). Let it cool down. Mix flour, baking powder and cocoa. Stir 2/3 of the flour mixture and the egg into the honey mixture. Knead in the remaining flour.
Wrap the dough in foil and put in a cool place for about 2 hours. Roll out the dough on a floured work surface approx. 4 mm thin. Cut out 2 snowmen (28-30 cm high, up to 25 cm wide) using a template. Line 2 baking trays with baking paper and place the snowmen on top. Bake in the preheated oven (electric cooker: 175 °C/ gas: level 2) for 12-15 minutes. Leave to cool on the tray. To decorate, stir egg white, 2 tablespoons of water and icing sugar until smooth. Thickly coat snowmen with the icing. Press chocolate lentils, liquorice, fizzy sweets and other sweets as buttons, scarf, hat and broom into the moist icing.
