Ingredients

  • 500 g Low-fat curd
  • 4 TABLESPOONS Sugar
  • 100 g Whipped cream
  • 4 sheets white gelatine
  • 2 TABLESPOONS Milk
  • 2 TABLESPOONS Cocoa powder
  • 150 g Strawberries (alternatively 125 g frozen strawberries)
  • 7-10 Tbsp pulp from 2 vanilla beans
  • 150 g clotted cream
  • 7-10 Tbsp Lemon balm

Directions

    Stir curd cheese and 3 tablespoons of sugar until smooth. Whip cream until stiff and fold in. Soak gelatine in cold water. Warm milk, cocoa and remaining sugar lukewarm. Squeeze out 2 sheets of gelatine and dissolve in it.

    Cut the quark into thirds. Stir the cocoa mixture into one third and divide into dessert glasses. Chill until the mixture becomes firm. In the meantime, cut 2 strawberries in half for decoration and set aside.

    Clean and puree the remaining strawberries. Squeeze out the remaining gelatine, dissolve lukewarm and stir into the strawberries. Fold quark into the second third and spread it over the cocoa layer. Chill again.

    Mix the remaining quark with vanilla pulp and sour cream and spread it on the strawberry layer. Serve decorated with retained strawberry halves and lemon balm.
