Clean and wash radishes. Cut 1 radish for garnishing with a knife and put it in ice water. For the vinaigrette, whisk vinegar, salt, pepper and honey. Add oil drop by drop to the vinaigrette.
Cut remaining radishes into strips and stir into the vinaigrette. Clean and wash the salad, shake dry and pluck into bite-sized pieces. Wash and clean the cucumber and cut into thin slices.
Arrange salad with dressing and salmon on a plate. Garnish with radishes. Serve with wholemeal baguettes.
