Cold papaya soup with goat cheese

Ingredients

Servings: 1
  • 4 Papayas
  • 400 ml dry white wine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 8 Stem(s) Mint
  • 80 g Goat Gouda cheese

Directions

    ##papayas## peel, halve and core. Dice the flesh roughly and puree finely.

  2. 2

    Bring wine and puree to the boil while stirring and season with salt and pepper. Chill the soup.

    ##Mint## wash, shake dry. Pluck the leaves from the stems, except for a little garnish, and chop finely. Stir mint into the cold soup.

    ##goat cheese## slice finely. Arrange soup and goat cheese and garnish with mint.
