Peel and wash the celery and carrots. Chop into fine strips. Peel and chop the onion. Peel and grate horseradish. Boil up apple juice, 5 tablespoons water, lemon juice, onion, stock, some salt and pepper.
Stir in horseradish, honey and oil. Mix with celery and carrots. Cool a little. Knead well with your hands. Leave to stand for about 1 hour.
Chop the nuts and roast them lightly. Wash and pluck the grapes. Wash apples, remove seeds and cut into small thin slices. Mix everything with carrots and celery. Leave to stand for another 1 hour.
