Potato pancakes with apple compote

Ingredients

Servings: 4
  • 500 g sour apples
  • 7-10 Tbsp juice of 1/2 lemon
  • 100 ml apple juice
  • 30 g Sugar
  • 750 g Potatoes
  • 1 Onion
  • 1 egg (size M)
  • 2 TABLESPOONS Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 4 TABLESPOONS Oil
  • 75 g Fresh cream
  • 7-10 Tbsp Lemon balm

Directions

    Peel apples and cut them into small pieces. Sprinkle with lemon juice. Boil up the apple pieces and apple juice. Cook everything for about 10 minutes. Stir in sugar. Let the compote cool down. Peel, wash and grate the potatoes.

    Peel onion and grate it to the potatoes. Add egg and flour and mix. Season with salt and pepper. Heat oil by the spoonful in a pan. Fry 4 small potato pancakes one after the other and keep warm. Serve the potato pancakes with the apple compote and crème fraîche. Garnish with lemon balm
