Coal stew with pumpkin and potatoes

Ingredients

Servings: 4
  • 1/2 Head White cabbage (about 600 g)
  • 400 g Potatoes
  • 500 g Hokkaido Pumpkin
  • 1 Onion
  • 2 TABLESPOONS Oil
  • 1 TEASPOON dried herbs of Provence
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1–1 1/4 l Vegetable broth
  • 1 small stick of leek (leek; approx. 200 g)
  • 4-6 Cabbage sausages
  • 7-10 Tbsp ground caraway

Directions

    Clean the cabbage, quarter it and remove the stalk. Cut the cabbage into thin strips. Peel, wash and dice the potatoes. Wash pumpkin, remove seeds and cut the flesh into cubes. Peel and halve the onion and cut it into strips

    Heat the oil in a pot. Steam cabbage and onion strips for 3-4 minutes, then add potatoes and pumpkin. Season with herbs, salt and pepper and steam for another 2-3 minutes. Add stock and simmer covered for about 30 minutes

    Clean the leek, cut the upper third and wash. Cut leek into rings. Add leek and cabbage sausage to the pot about 15 minutes before the end of the cooking time. Season the stew with salt, pepper and some caraway seeds and serve
