Avocado cream with dried cod

Ingredients

  • 150 g dried, unsalted cod
  • 1 Garlic clove
  • 3 Stem(s) flat leaf parsley
  • 1 red chilli pepper
  • 1–2 Limes
  • 1 Spring onion
  • 2 Avocados
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp pink pepper berries

Directions

    Steam fish in water for 10-12 minutes. Take out and let cool. Remove skin and bones, pluck meat finely

    Peel and finely chop the garlic. Wash parsley, shake dry and chop leaves of 2 stems. Halve the chilli pepper lengthwise, wash, seed and chop finely. Halve lime, squeeze juice. Wash and clean spring onion and cut into fine rings

    Cut the avocados in half, remove the seeds and the flesh from the skin. Mash the flesh with a fork. Mix with lime juice, garlic, spring onion and chopped parsley, season with salt and pepper. Fold in fish

    Spread the cream on glasses and garnish with the remaining parsley. Sprinkle with pink pepper berries
