Finely grind the almonds. Beat the egg whites until stiff. Stir in icing sugar. Mix the beaten egg whites, except 4 tablespoons, almonds, cinnamon and bitter almond oil. Roll out the mixture between foil to a thickness of approx. 1/2 cm. Cut out fir trees with floured moulds.
Spread with the remaining beaten egg white. Spread almond flakes on top. Bake in the preheated oven (electric: 150 °C/ gas: level 1-2) for about 20 minutes. Let cool off. Mix icing sugar and vanillin sugar and dust the cookies with it. Results in about 25 pieces
