Cinnamon stars (Christmas biscuits in grandmothers style)

  • 225 g Sugar
  • 2 packages Vanillin sugar
  • 1 TEASPOON Lemon juice
  • 2 TEASPOONS ground cinnamon
  • 300 g ground almonds (with skin)
  • 100 g Icing sugar
  • baking paper

Directions

    Beat egg whites until stiff. Add sugar and vanillin sugar, beat for another 10 minutes until the sugar is dissolved. Stir in lemon juice. Set aside 8 tablespoons of egg white mixture to coat the cinnamon stars. Fold the cinnamon and almonds into the remaining egg white mixture.

    Roll out the dough about 8 mm thick on a worktop dusted with icing sugar. Cut out stars (approx. 6 and 7 cm in size). Put the stars on a baking tray covered with baking paper and brush them thickly with the remaining egg white mixture. Bake in a preheated oven (electric: 150°C/ gas: level 1) for about 25 minutes. Results in approx. 30 pieces
