Christmas tree cake from gingerbread dough

Ingredients

  • 100 g dried apricots
  • 1 (500 g) Baking mix "brown gingerbread"
  • 1 Egg
  • 25 g soft butter or margarine
  • 100 g Marzipan raw mass
  • 115 g Icing sugar
  • 7-10 Tbsp a few drops of green food colouring
  • 25 g Sweetmeats
  • baking paper
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp a freezer bag

Directions

    Dice the apricots very finely. Put the dough mixture into a mixing bowl. Add egg fat, 1/8 litre water and apricots. Mix to a smooth dough with the whisk of the hand mixer.

    Pour the dough into a springform pan (26 cm Ø) lined with baking paper, smooth it down and bake in a preheated oven (electric cooker: 200°C/ gas: level 3) for approx. 20 minutes. Let the cake cool down and remove from the tin.

    In the meantime, knead the marzipan, 25 g icing sugar and food colouring. Roll out the marzipan on the work surface dusted with icing sugar and cut out 8 fir trees (approx. 6.5 cm wide, 8 cm high).

    Cut the cake into eight equally sized pieces and place a fir tree on each piece. Stir 75 g icing sugar and 1 tablespoon water until smooth. Pour the icing into a freezer bag and cut off the top.

    Decorate fir trees with sugar icing. Decorate the marzipan trees with sugar icing. Sift the remaining icing sugar onto the cake edge. Makes 8 pieces.
