Ingredients

  • 150 ml Milk
  • 400 g Flour
  • 1/2 cube (21 g) Yeast
  • 50 g Sugar
  • 1 egg (size M)
  • 50 g Butter or margarine
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 Egg yolk (size M)
  • 1 TABLESPOON condensed milk
  • 7-10 Tbsp some almond, pistachio and hazelnut kernels
  • 7-10 Tbsp Raisins and dried apricots
  • 7-10 Tbsp Flour
  • baking paper
  • 7-10 Tbsp parchment paper

Directions

    Heat the milk lukewarm. Sieve the flour into a bowl and make a depression in the middle. Add yeast, some sugar and some lukewarm milk to the depression, stir until smooth and cover with some flour from the rim. Cover the dough and leave to rise in a warm place for about 10 minutes. Add egg, soft fat, salt, lemon peel, remaining sugar and milk and knead everything to a smooth dough.

    Cover the dough and let it rise for another 20 minutes. Make two different sized Santa Claus stencils with head, cap and feet (approx. 15 and 30 cm tall). Knead the dough again well and roll out on a floured work surface to a thickness of approx. 1 cm. Cut out two Santa Clauses from the dough sheet using the templates. Whisk egg yolk and condensed milk. Place the Santa Clauses on the baking tray lined with baking paper and brush with the whisked egg yolk. Form 2 bags from the remaining dough and decorations for faces and bodies and place them on the men, pushing the bags a little under their arms. Brush with egg yolk again and decorate with the nut kernels, raisins and apricot pieces. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for 25-30 minutes. If necessary, cover with parchment paper for the last 5-10 minutes.

    Place the Santa Clauses on the baking tray lined with baking paper and brush with the whisked egg yolk. Form 2 bags from the remaining dough and decorations for faces and bodies and place them on the men, pushing the bags a little under their arms. Brush with egg yolk again and decorate with the nut kernels, raisins and apricot pieces. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for 25-30 minutes. If necessary, cover with parchment paper for the last 5-10 minutes. Remove the little Santa Claus from the oven after 20 minutes if necessary. Let Santa Claus cool down and wrap him as a present or serve him with Advent coffee
