Chive scrambled eggs on toast

Ingredients

Servings: 4
  • several sheets Lettuce (e.g. Lollo bianco)
  • 1 collar Chives
  • 200 g Mushrooms
  • 1 Small onion (e.g. red)
  • 1-2 TABLESPOONS Vinegar
  • 7-10 Tbsp salt, white pepper
  • 7-10 Tbsp Sugar
  • 2 TABLESPOONS Oil
  • 4 Eggs
  • 8 TABLESPOONS Milk
  • 1 TABLESPOON Butter/ margarine
  • 4 discs Rye toast bread

Directions

    Clean, wash and pluck the salad into large pieces. Wash the chives and cut into fine rolls. Clean, wash and slice the mushrooms

    Peel and chop the onion. Mix with vinegar, salt, pepper and sugar. Add the oil. Drizzle the salad and mushrooms with marinade

    Whisk eggs and milk, stir in chives. Season with salt and pepper

    Heat the fat. Let the egg milk falter in it at low heat, pushing it together from time to time with a spatula

    Toast roasting. Add scrambled eggs. Serve with salad and mushrooms
