Mozzarella with mango-cucumber salsa

Ingredients

  • 1/2 Mango
  • 100 g Cucumber
  • 1 Shallot
  • 1 red chilli pepper
  • 2 TABLESPOONS light balsamic vinegar
  • 2 TABLESPOONS Orange juice
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 (250 g) Roll of mozzarella cheese

Directions

    Cut the mango off the stone. Peel the flesh and dice finely. Wash the cucumber, cut in half lengthwise and remove the seeds. Dice cucumber finely. Peel, halve and finely dice shallot. Clean, wash and halve the chili lengthwise.

    Remove cores. Finely chop the pod. Mix vinegar and orange juice, fold in oil. Season to taste with salt, pepper and sugar. Mix mango, cucumber and shallot with the dressing. Cut mozzarella into 8 slices.

    Spread the salsa over the mozzarella slices and place 2 slices on top of each other.
