Put the chickpeas in a sieve, rinse and drain. Wash the lemons hot, grate them dry and grate the peel. Halve the lemons and squeeze them. Wash parsley, dab dry, pluck leaves from the stalks and chop coarsely. Dice sheep's cheese, mix with chickpeas, parsley, 4-5 tbsp. lemon juice, lemon peel and oil, season with salt, pepper and sugar, marinate for approx. 30 minutes, then season again.
