Pull the can by the flap so that it opens. Open the can carefully and remove the dough. Roll out the dough on a work surface and separate it into marked triangles, if necessary cut with a knife. Cover each triangle with a slice of turkey breast and 2 slices of camembert. Spread the cranberries evenly on top and roll the dough triangles towards the top and form into croissants. Place on a baking tray lined with baking paper.
Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 18 minutes. Whisk egg yolk and cream. Brush the croissants with the mixture 2-3 minutes before the end of the baking time. Remove the croissants from the oven, let them cool down a bit and serve them still lukewarm.
