Carrot noodle soup with sausages

Ingredients

Servings: 4
  • 250 g Broccoli
  • 2 Carrots
  • 1 Onion
  • 1 TABLESPOON Oil
  • 1 l Vegetable broth (instant)
  • 150 g Noodles (e.g. croissants)
  • 7-10 Tbsp Salt
  • 200 g Vienna sausages
  • 2 (25 g each) Mini salami
  • 7-10 Tbsp Pepper
  • 4 discs Toast
  • 4 wooden skewers

Directions

    Clean and wash the broccoli and cut it into very small florets. Peel and wash the carrots, cut them in half lengthwise and slice them. Peel and finely chop the onion. Heat the oil in a pot. Sauté the carrots and onion.

    Add stock, bring to the boil and cook for about 10 minutes. Add broccoli to the carrots 4 minutes before the end of the cooking time. Cook pasta in boiling salted water according to package instructions. Slice the Wiener and Mini-Salami and put them on 4 skewers. Heat the skewers in the soup for approx. 3 minutes, remove and keep warm. Pour the noodles onto a sieve, drain and add to the soup. Season to taste with salt and pepper. Serve noodle soup together with the sausage skewers. Toast the toasted bread and possibly cut out mushrooms from the toasted bread.

    Heat the skewers in the soup for approx. 3 minutes, remove and keep warm. Pour the noodles onto a sieve, drain and add to the soup. Season to taste with salt and pepper. Serve noodle soup together with the sausage skewers. Toast the toasted bread and possibly cut out mushrooms from the toasted bread. Serve with soup
