Washing apples. Remove the core, e.g. with an apple corer. Cut apples into thick slices and sprinkle with lemon juice
Caramelize 2 tablespoons of sugar in a pan without fat. Deglaze with cider while stirring vigorously and let simmer for about 2 minutes. Covered apple slices and steam for about 2 minutes
Beat the egg white with the whisk of the hand mixer until stiff, adding 1 tbsp. sugar and flavour. Fold in almonds
Fill apple slices with cider-caramel into 4 small greased moulds or one large mould. Spread egg white on top. Bake in a preheated oven (electric: 225 °C/recirculating air: 200 °C/gas: level 4) for 4-5 minutes. Decorate with mint if necessary.
