Remove the roll of puff pastry from the refrigerator. Preheat the oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Line two trays with baking paper. Whisk 1 egg yolk and 1 tbsp. water.
Cut the dough into approx. 30 pieces, place them on the trays and brush with egg. Bake for 6-8 minutes. Put 250 g camembert in pieces on the hot pastry. Add about 150 g wild cranberries and leaves of 3 stalks of thyme.
