Melt the fat, let it cool down a little. Mix eggs, flour and buttermilk. Stir in fat. Leave to swell for about 15 minutes.
Stir curd and orange juice until smooth. Season to taste with sweetener
Coat the waffle iron with a little oil and preheat it. Put 1 1/2-2 tablespoons of dough in the middle of each waffle iron and bake. Bake about 8 waffles in total
Share waffles in hearts. Fill curd cream into a piping bag with a perforated nozzle. Spray except for a little bit on half of the hearts. Place the remaining heart wafers on top. Decorate with remaining quark cream, possibly icing sugar, chocolate shavings and orange corners
- For these buttermilk wafers you need about 100 g less butter than for "normal" wafers. That they still taste so juicy is due to the buttermilk
- The wafers get a fruity note from lemon or orange butter milk
