Burger with goat fresh cheese cream and cucumber-mint salsa

Ingredients

Servings: 4
  • 1/4 Cucumber
  • 1 spearmint stem
  • 1 TEASPOON + 2 tablespoons olive oil
  • 1/2 TEASPOON White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 150 g Fresh goat cheese
  • 1 TABLESPOON Milk
  • 4 dried tomatoes
  • 1 small onion
  • 300 g mixed minced meat
  • 1 Egg Yolk
  • 1 TABLESPOON Breadcrumbs
  • 1 TEASPOON Mustard
  • 4 small round rolls (approx. 50 g each)

Directions

    Cucumber wash, clean and cut into small cubes. Wash mint, shake dry, pluck leaves from the stalk and chop finely. Mix mint, cucumber, 1 tsp. oil and vinegar, season with salt and pepper. Stir goat's cream cheese with milk until smooth, season with salt and pepper. Cut tomatoes in half lengthwise

    Peel the onion and cut into small cubes. Put minced meat, egg yolk, breadcrumbs, mustard and onion in a bowl and mix everything together. Season with salt and pepper

    Form 4 meatballs from the mixture. Heat 2 tablespoons of oil in a frying pan. Fry the meatballs for 5-6 minutes while turning. Cut the rolls in half, spread 1/2 tsp goat's cream cheese on each base. Add 2 tomato halves, 1 meatball and finally 1 tsp. cream and salsa. Place the upper roll half on top
