Ingredients

  • 2 medium-sized onions
  • 200 g streaky smoked bacon
  • 3-4 Stem(s) fresh sage
  • 2 can(s) (850 ml each) Tomatoes
  • 3-4 Tbsp Olive oil
  • 1/2-1 TEASPOON ground chilies
  • 7-10 Tbsp Salt
  • 1 TEASPOON clear instant broth
  • 750 g Bucatini (thin macaroni noodles)
  • 100 g grated pecorino or parmesan cheese

Directions

    Peel the onions. Finely dice onions and bacon. Wash sage, shake dry and remove leaves. Drain the tomatoes and collect the juice. Dice the tomatoes.

    Heat the oil in a large, tall pan. Fry the bacon until crispy. Add onions, chillies and sage and fry briefly. Add tomatoes with juice and 1/4 litre water. Bring to the boil, stir in broth and simmer for about 10 minutes, stirring occasionally. Season to taste with salt and pepper. If the sauce gets too thick, add about 1/4 litre of water or stock. In the meantime prepare noodles in boiling salted water according to the instructions on the packet. Drain the noodles and let them drain.
