Broccoli scrambled eggs with rocket

Ingredients

  • 500 g Broccoli
  • 100 g Sweet peas
  • 1 collar (approx. 50 g) Arugula
  • 1 collar Parsley
  • 8 Eggs (Gr. M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Nutmeg
  • 2 TABLESPOONS Sesame
  • 1 TABLESPOON Oil
  • 80 g Pumpernickel

Directions

    Clean and wash the broccoli and cut it into small florets. Wash, clean and cut the mangetouts into strips. Wash, clean, drain well and chop the arugula. Wash parsley, shake dry.

    Pluck off leaves and chop them. Whisk eggs with rocket and parsley. Season with salt and nutmeg.

    Roast sesame seeds in a pan without fat, remove. Bring 150 ml water to the boil in the pan. Sauté the broccoli and mangetouts in it and simmer over high heat until the water has evaporated. Stir several times.

    Mix sesame seeds, up to about 1 teaspoon, into the egg. Add oil to the vegetables. Add the egg mixture to the pan, allow to set on a medium heat, and in the meantime use a spatula to mix the egg and vegetable mixture.

    Cut pumpernickel diagonally in half. Arrange everything.
