Cook the beans for about 5 minutes in boiling salted water. Drain, rinse and press the seeds out of the skin. Drain the tomatoes and collect the oil. Cut the tomatoes into pieces. Cut ham into strips
Pluck the coriander and chop finely, leaving a few leaves for decoration. Halve the lemon and squeeze the juice. Mix lemon juice, chopped coriander and harissa, season with salt, some sugar and pepper. Fold in 6 tablespoons of oil (tomato oil and possibly olive oil)
Mix beans, olives, ham, vinaigrette and tomatoes in a bowl. Decorate with coriander leaves and serve immediately
