Bread salad with tomatoes

Ingredients

  • 1 Ciabatta (from the day before)
  • 10 TABLESPOONS Olive oil
  • 1 kg Vine tomatoes
  • 1 green and yellow pepper
  • 1 Vegetable Onion
  • 2 Garlic cloves
  • 8 TABLESPOONS Essig White Balsamic
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 1 collar Parsley

Directions

    Cut bread into cubes. Heat 2 tablespoons of oil in a frying pan and toast bread in it until golden brown all around. Place in a bowl and sprinkle with 100 ml water. Wash, clean and slice the tomatoes. Quarter peppers, remove seeds, wash and cut into fine cubes. Peel and halve onion and cut into fine rings. Peel garlic and press it through a garlic press.

    Mix vinegar, salt, pepper and sugar. Gradually fold in 8 tablespoons of oil. Wash parsley and dab dry. Pluck the leaves from the stalks, except some for garnishing, and chop finely. Mix all the ingredients together and leave to stand for at least 30 minutes. Arrange on plates and garnish with the remaining parsley
