Red cabbage and grape salad with cheese

Ingredients

  • 500 g Red cabbage
  • 4 TABLESPOONS Red wine vinegar
  • 1 TEASPOON Salt
  • 7-10 Tbsp white pepper
  • 1-2 TEASPOONS Sugar
  • 4 TABLESPOONS oil+lemon
  • 250 g seedless grapes
  • 175 g medieval Gouda cheese in slices
  • 7-10 Tbsp Lemon balm

Directions

    Clean, wash and drain the red cabbage. Slice into wafer-thin strips on a vegetable slicer. Mix vinegar, salt, pepper and sugar. Beat in lemon oil. Add the vinaigrette to the red cabbage and knead with your hands for about 5 minutes.

    Cover and leave to soak for a few hours, preferably overnight. Pluck the grapes from the stems, wash and drain. Halve the grapes. Cut cheese slices into triangles. Mix the grapes and cheese with the red cabbage, season to taste again and serve garnished with lemon balm
