Bread salad with bacon and rocket

Ingredients

Servings: 4
  • 1 pack of (100 g) Bacon
  • 4 thick slices of rye mixed bread (approx. 75 g each)
  • 2 Garlic cloves
  • 75 g Butter or margarine
  • 2 red onions
  • 200 g Rocket
  • 3-4 Tbsp White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Lemon Pepper
  • 4-5 Tbsp Sunflower oil
  • 100 g aged Gouda cheese

Directions

    Cut the bacon slices in half crosswise and fry them crisply in a pan without fat. Remove from the pan and let cool off. Cut bread into large cubes. Peel garlic and cut into fine slices. Add fat to the frying fat in the pan, heat it up and add bread cubes and garlic slices. Fry the bread cubes in it until golden brown all around. Let it cool down.

    Peel onions and cut into rings. Clean and wash the rocket. Season vinegar with salt and lemon pepper. Whip the oil into it. Mix all salad ingredients and blend with the vinaigrette. Grate cheese finely and sprinkle over salad. Fold in a little and serve immediately
